VOLUNTEER ORIENTATION/TRAINING SESSION FOR STORE OPERATIONS, MARCH 31, 2011
If you would like to volunteer, please sign up for the Volunteer Orientation session by either adding your name to the list in the store or calling the Co-op at 360-832-2667 or Margaret at 360-832-3395. We would like to get an idea of how many people plan to attend so we can make sure we have enough space, chairs, and materials. If you have been wanting to volunteer, this is a great way to get started. There are several areas in the store that could use additional volunteer support. It will be great to have the Store team all in one place at one time. Existing volunteers are also encouraged to attend. If you are interested in operations other than the Store, contact Margaret and she will find a job that meets your needs and provides a service to the Co-op.
Seeds Available for Sale in the Store
We now have a rack of Seeds for your garden needs in the store! The rack offers 48 varieties of Organic Heirloom and Open pollinated Vegetable seeds from High Mowing Organic Seeds.
Seed Selection and Saving Seminars
The topic of seed selection in addition to seed saving will be presented by members of the Mountain Community Co-op on March 6 and a follow up session on March 24 at the Eatonville Library on Center St.


Produce Share recipe this week is Sookhi Bhaji: Indian Potatoes with Mustard Seed from Karelina
I was sitting in my chiropractor’s office in Graham, glancing through a
Sunset Magazine, when I ran into a recipe for potatoes with mustard seed. I didn’t write that recipe down, but it reminded me of a dish I learned to make from my South Indian neighbor in Rochester, NY. One way to serve is to make a plain egg omelet and roll the potatoes into the center – delicious with paratha
[1] and a dollop of chutney or raita (yogurt and cucumber salad).
Ingredients4 T. coconut or other mild vegetable oil
2 t. black or brown mustard seed
2 t. yellow mustard seed
1-3
[2] fresh chili peppers, whole with seeds removed, optional
2 t. cumin seed
1 bay leaf
2 lbs. Yukon Gold potatoes, cubed (with skin)
1 medium onion, diced
1 t. sea salt, fresh ground
½ t black pepper, ground
2 t. coriander seed, crushed
½ t. cumin, crushed
¼ t. cayenne
½ t. turmeric
½ c fresh cilantro, chopped
Preparation1. Pop mustard seeds in 2 T. preheated oil on medium high heat.
2. Reduce the heat, add onion and fresh chili peppers and cook until onions are translucent.
3. Stir in cumin, turmeric, bay leaf, potatoes, salt, and pepper. Toss until potatoes well coated with oil and spices.
4. Add 1 T. water, cover, and simmer about 20 minutes, until potatoes are tender. Add more water as needed to prevent sticking.
5. Add remaining 2 T. oil, cumin, and cayenne.
6. Cook until potatoes are golden. Remove chilis.
7. Stir in fresh cilantro and serve.
[1] Paratha (whole wheat Indian bread) and whole wheat tortillas have more in common than differences. Fry tortillas in butter, until lightly browned, and serve.
[2] How many peppers depends on your tolerance and the heat of the chilis. Removing the seeds leaves the hot taste, without the burn.

Seeds: Select for your garden and our future
Toby and Irene Bensinger have a grand and sustainable garden outside Eatonville. Much of their produce is donated to the Food Bank. They don't simply look at their participation in the sustainable movement in their own garden and locally but on a global level.
